Mode of Assessment

There will be a compulsory 2 modes of assessment consisting of a total of 30 minutes written assessment and 150 minutes practical assessment.

Course Overview

This course is targeted at the public with basic baking knowledge and junior bakers who want to learn intermediate skills such as making advanced pastries. The programme will build their understanding of advanced level pastries. Learners will learn the skills such as applying recipes and methods in preparing intermediate level pastries, methods of assembling, applying fillings and finishing to pastries. This programme is designed for a participant who has an interest to learn more about advanced pastries making. The programme will also promote opportunities for the public to pursue a career in the Food Service industry.

Course Objectives

Successful candidates will be able to:

  • apply the principles and preparation methods of baking intermediate level pastry
  • complete the making of pastry and suggest suitable assembling methods for intermediate pastries
  • select and apply finishing for intermediate pastries products such as dough pastries and cakes
  • discuss and select appropriate finishing for intermediate pastries such as entremets and tarts

Pre-requisites

Prior to attending this course, learner should be able:

  • To read and write English at a proficiency level equivalent to ES WSQ level 3.
  • Communicate information effectively and work in a team.
  • Plan and organise resources and activities to complete work activities within specific timeframes.
  • With basic understanding of baking equipment and ingredients.
  • With basic knowledge of pastries making and baking.

Course Outline

Learning Unit 1 – Apply intermediate level pastries preparation methods

Learning Unit 2 – Apply baking processes and assembling methods for intermediate pastries

Learning Unit 3 – Prepare finishing for intermediate pastries (dough pastries and cakes)

Learning Unit 4 – Prepare finishing for intermediate pastries (entremets and tarts)

Funding Eligibility Criteria:

Company Sponsored Trainee

  • Singapore Citizens or Singapore Permanent Residents
  • From 1 October 2023, attendance-taking for SkillsFuture Singapore's (SSG) funded courses must be done digitally via the Singpass App. This applies to both physical and synchronous e-learning courses

  • Trainee must achieve at least 75% attendance
  • Trainee must pass all prescribed tests / assessments, and attain 100% competency
  • NTUC LearningHub reserves the right to claw back the funded amount from trainee if he/she did not meet the eligibility criteria
  • Singapore Citizens or Singapore Permanent Residents

SkillsFuture Credit:

  • Eligible Singapore Citizens can use their SkillsFuture Credit to offset course fee payable after funding.

UTAP:

  • This course is eligible for Union Training Assistance Programme (UTAP).
  • NTUC members can enjoy up to 50% funding (capped at $250 per year) under UTAP.

Absentee Payroll (AP) Funding: 

  • $4.50 per hour, capped at $100,000 per enterprise per calendar year.
  • AP funding will be computed based on the actual number of training hours attended by the trainee.
  • Note: Courses / Modules under Professional Conversion Programme (PCP) will not be eligible for AP funding claim.
