Who Should Attend

This course introduces individuals in the Food Service industry to the topic on food waste disposal and reduction, and aim to equip them with knowledge and ability to identify food wastage gaps and how that could be improve.

Course Overview

With increased emphasis on creating a zero waste Singapore, reducing food waste is increasing becoming an essential aspect of sustainable development that many companies are looking at. Food waste is currently one of the biggest waste streams in Singapore and the amount of food waste generated has grown by around 20% in the past 10 years. In fact, food waste makes up for about half of the average 1.5kg of waste disposed by each household in Singapore daily.

Through this course, learners will gain an understanding to the problem of food waste, and the practical solutions to address it, including reducing waste at different stages of the operation process and improving equipment design, maintenance, and usage. Ultimately, reducing food waste can benefit businesses, customers, and the environment.

Course Objectives

Upon completing this course, participants will be able to:

  • Identify the types and importance of food waste disposal and reduction in accordance to organisation SOPs
  • Identify types of equipment to process food waste
  • Recognise the usage of equipment and signs of fault
  • Explain importance of disposal procedures in accordance to prevent food contamination
  • Examine possible causes for food spoilage or wastage and apply preventive measures against cross contamination

Pre-requisites

The admission requirements are:

  • Read, write, and speak the Chinese language
  • Manipulate numbers at WPN Level 3

Course Outline

LU1: Food waste disposal and reduction

  • Importance of food waste disposal and reduction
  • SOP to dispose food waste
  • Importance of recycling and eco-friendly features

LU2: Cause and solution related to equipment’s impact on food spoilage and waste

  • Types of equipment used
  • Equipment operation to process food waste
  • Signs of equipment faults

LU3: Cause and solution related to other types of impact on food spoilage and waste

  • Appraise reasons for food spoilage and disposal

Certificate Obtained and Conferred by

  • Upon meeting the attendance and assessment(s) criteria, participants will be awarded with a digital Statement of Attainment (SOA), accredited by SkillsFuture Singapore. SOA will be reflected as [code name i.e., FSS-WMO-2007-1.1 Food Waste Disposal and Reduction ]
  • Certificate of completion from NTUC LearningHub

Upon meeting at least 75% attendance and passing the assessment(s), participants will receive a Certificate of Completion from NTUC LearningHub.

  • Singapore Citizens or Singapore Permanent Residents
  • From 1 October 2023, attendance-taking for SkillsFuture Singapore's (SSG) funded courses must be done digitally via the Singpass App. This applies to both physical and synchronous e-learning courses.
  • Trainee must pass all prescribed tests / assessments and attain 100% competency.
  • NTUC LearningHub reserves the right to claw back the funded amount from trainee if he/she did not meet the eligibility criteria.
